Buttercream


Soft and delicious. This can be used for cupcakes, cakes and even cookies. 


Ingredients
100g Softened butter
225g Icing Sugar


Method
  1. Beat the softened butter until fluffy and pale. This can take 5-6 minutes.
  2. Then add the icing sugar slowly.
  3. Beat for 7 minutes. The buttercream mix should be fluffy and pale.




Tip: Double the above ingredients if using a piping bag.

Homemade Jam Tarts

Extremely delicious Jam tarts and all made at home! Ingredients 180g plain flour 2 tbsp Castor Sugar 80g Butter 1 Egg Pinch of Salt Jam of your choice Method Sieve the flour, sugar, and salt into a mixing bowl. Add the butter and rub until it resembles crumbs. Beat the egg and stir into the mix. Now, gather the mix into a smooth dough ball. Wrap dough in clear film and place in the fridge for 30 minutes. Preheat the oven to 220°c/gas mark 7. Lightly grease a 12-hole tartlet pan or muffin tray On a lightly floured surface, roll the pastry out to about 3mm thick. Using a round 3inch cutter (or anything you have of this size), stamp out 12 circles. Press the pastry circles into the greased tin. Place a teaspoon of jam into the center of each tart. Bake for 15 minutes, until pastry is cooked and light golden brown. Let the tarts cool for a couple of minutes and then carefully lift the tarts out of the tray. Banana Loaf

This loaf is soft and very moreish. It is enjoyed well with a cup of tea! In gredients  110g Melted Butter/Margarine 195g Castor Sugar 245g Plain Flour 1 tsp Baking Powder 1 tsp Vanilla Extract 2 Ripe Bananas Method Preheat the oven to 180 °C/gas mark 4 Grease a loaf tin. Sieve the flour and baking powder and leave to the side. Mash the two bananas with the vanilla extract and leave to the side. Cream the sugar and butter/margarine until fluffy and pale. Add the mashed bananas to the batter and mix for 1 minute. Add the flour and baking powder to the batter and mix for a few seconds. Pour the mix into the greased loaf tin and bake for 45 minutes. The loaf can be covered after 25 minutes with tinfoil to stop it from browning too much on top. Insert a toothpick into the middle of the loaf. It should come out clean, if not leave it in the oven for a further 5- 10 minutes. Let it cool completely in the loaf tin before removing and cutting. ...
