These melt in your mouth, almond drops are great with a cuppa!
Ingredients
220g Melted butter
280g Plain flour
140g Castor sugar
1 Egg yolk
2 1/2 tsp of almond extract
Pinch of salt
Choice of Jam
Method
- Preheat the oven to 190°c/gas mark 5
- Have two baking trays ready
- Place the sugar and butter into a bowl and cream until light and fluffy.
- Beat the egg yolk with the almond extract and add this to the creamed sugar and butter. Beat until combined.
- Sieve the flour and salt and add this to the batter until when combined.
- Using a tablespoon or a scope, form round balls (the best you can) and place them on the baking tray.
- Use a dampened handle of a wooden spoon to form holes in the centre of the round moulds. Then add a small amount of your choice of jam.
- Bake for 12 minutes or until they are golden brown.
Tip: These drops are very cake-like and so it the batter. It might be difficult to form round moulds using your hands so I would recommend using a scope.
You can also add 55g of chopped almonds if you like.
