Almond Cake Drops


These melt in your mouth, almond drops are great with a cuppa!


Ingredients
220g Melted butter
280g Plain flour
140g Castor sugar
1 Egg yolk
2 1/2 tsp of almond extract
Pinch of salt
Choice of Jam

Method
  1. Preheat the oven to 190°c/gas mark 5
  2. Have two baking trays ready
  3. Place the sugar and butter into a bowl and cream until light and fluffy.
  4. Beat the egg yolk with the almond extract and add this to the creamed sugar and butter. Beat until combined.
  5. Sieve the flour and salt and add this to the batter until when combined.
  6. Using a tablespoon or a scope, form round balls (the best you can) and place them on the baking tray.
  7. Use a dampened handle of a wooden spoon to form holes in the centre of the round moulds. Then add a small amount of your choice of jam.
  8. Bake for 12 minutes or until they are golden brown.


Tip: These drops are very cake-like and so it the batter. It might be difficult to form round moulds using your hands so I would recommend using a scope.
You can also add 55g of chopped almonds if you like.

Choco Cookies

Guilty pleasure at its peak! These cookies are amazing and a must for chocoholics!  Ingredients 150g Plain Flour 75g Soft light brown sugar 125g melted unsalted butter 25g Cocoa Powder 1 tsp bicarbonate soda 50g Caster Sugar 1 tsp vanilla extract 1/2 tsp salt (optional but does help break up the taste from all the chocolate) 1 large egg from the fridge 130g Dark Chocolate 355g Dark chocolate chips Method Prehe at the oven to 170 degrees/gas mark 3. Chocolate Chip Cookies

Ingredients 250g Plain Flour 170g Melted unsalted butter 1/2 tsp bicarbonate soda Pinch of salt 150g Dark brown sugar 60g Castor Sugar 1 Egg 325g Chocolate chips 1 Tbsp Vanilla Extract  Method Preheat the oven to 170°c/gas mark 3. Sieve the flour, salt and bicarbonate soda and leave to the side. Cream the melted butter and sugars together until pale and fluffy. Beat the egg in a separate bowl with the vanilla extract and add this gradually to the batter. Beat for 1 minute. Beat in the salt, flour and bicarbonate soda. Beat until well combined. Stir in the chocolate chip cookies. Place the batter into the fridge for 30 minutes. This allows you to handle the batter better. Using a tablespoon, scoop out round molds and place onto the baking tray. Or, you could scoop out the batter using a spoon and then roll it into a round shape. Keep cookies 6cm apart.
