Choco Cookies


Guilty pleasure at its peak! These cookies are amazing and a must for chocoholics! 




Ingredients
150g Plain Flour
75g Soft light brown sugar
125g melted unsalted butter
25g Cocoa Powder
1 tsp bicarbonate soda
50g Caster Sugar
1 tsp vanilla extract
1/2 tsp salt (optional but does help break up the taste from all the chocolate)
1 large egg from the fridge
130g Dark Chocolate
355g Dark chocolate chips

Method
  1. Preheat the oven to 170 degrees/gas mark 3.
  2. Sieve the flour, bicarbonate soda and cocoa powder into a bowl and leave to the side.
  3. Melt the 125g of dark chocolate in heatproof bowl over a pan of water and cool completely.
  4. Cream the butter and sugars in another bowl until fluffy and pale. Add the cooled melted chocolate into the batter. Be sure to use a spatula to remove all the chocolate from the bowl J. Beat this for 1 minute.
  5. In a separate bowl, beat the egg and the vanilla extract and then add gradually to the batter. Beat for 1-2 minutes.
  6. Gradually add the flour, bicarbonate soda and cocoa powder. If using an electric mixer, please mix on the highest speed for a few seconds (just until everything is combined). Same applies if using a wooden spoon.
  7. Once this is done, add the dark chocolate chips and stir this using a wooden spoon.
  8. Put the batter into the fridge for half an hour to firm. You can leave it in the fridge longer if you wish to bake at a later time in the day. However, you can skip this step, if, like me, you are impatient and want the cookies cooked straight away J.
  9. Using a teaspoon, scoop the batter and shape into balls (you can skip this and just scoop the batter into equal size mounds) and place onto the baking tray.
  10. Bake for 15 minutes. Take out of the oven and cool. 
Tip: if you choose not to put the batter into the fridge it can be slightly fiddly to shape.
You can use a mixture of white chocolate chips and milk chocolate. The choice is yours!
You can change the dark chocolate to milk chocolate.

Chocolate Chip Cookies

Ingredients 250g Plain Flour 170g Melted unsalted butter 1/2 tsp bicarbonate soda Pinch of salt 150g Dark brown sugar 60g Castor Sugar 1 Egg 325g Chocolate chips 1 Tbsp Vanilla Extract  Method Preheat the oven to 170°c/gas mark 3. Sieve the flour, salt and bicarbonate soda and leave to the side. Cream the melted butter and sugars together until pale and fluffy. Beat the egg in a separate bowl with the vanilla extract and add this gradually to the batter. Beat for 1 minute. Beat in the salt, flour and bicarbonate soda. Beat until well combined. Stir in the chocolate chip cookies. Place the batter into the fridge for 30 minutes. This allows you to handle the batter better. Using a tablespoon, scoop out round molds and place onto the baking tray. Or, you could scoop out the batter using a spoon and then roll it into a round shape. Keep cookies 6cm apart.
