Chocolate Chip Cookies

Ingredients
250g Plain Flour
170g Melted unsalted butter
1/2 tsp bicarbonate soda
Pinch of salt
150g Dark brown sugar
60g Castor Sugar
1 Egg
325g Chocolate chips

1 Tbsp Vanilla Extract

Method
  1. Preheat the oven to 170°c/gas mark 3.
  2. Sieve the flour, salt and bicarbonate soda and leave to the side.
  3. Cream the melted butter and sugars together until pale and fluffy.
  4. Beat the egg in a separate bowl with the vanilla extract and add this gradually to the batter. Beat for 1 minute.
  5. Beat in the salt, flour and bicarbonate soda. Beat until well combined.
  6. Stir in the chocolate chip cookies.
  7. Place the batter into the fridge for 30 minutes. This allows you to handle the batter better.
  8. Using a tablespoon, scoop out round molds and place onto the baking tray. Or, you could scoop out the batter using a spoon and then roll it into a round shape. Keep cookies 6cm apart. However, this will also depend on how big your cookies are.
  9. Bake for 15 minutes or until golden brown around the edges.
  10. Let them cool completely before digging in :)
Tip: You can add additional chocolate chips onto the cookies before they go into the oven.
If you decide to add more chocolate chips, go ahead and reduce the sugar.
