Delicious Concrete Cake

  

This cake reminds me of my school lunches. It brings back so many memories every time I bake this, plus it is a massive hit in my house. Give it a go, you will not regret it! :)




Ingredients
160g Butter or Margarine
175g Granulated White Sugar
225g Plain Flour
1/4 tsp Baking Powder
30g Cocoa Powder
1 beaten egg


Method
  1. Pre-heat the oven on the lowest temperature. At this point, we only want to warm the oven.
  2. Grease a 28cm by 22cm baking tray.
  3. In a separate bowl sieve the dry ingredient (flour, cocoa powder and baking powder) and leave it to the side.
  4. Melt the butter/margarine and let it cool. Once cooled, beat with the sugar until nice and fluffy.
  5. Add the beaten egg and beat the batter for 1-2 minutes (until everything is nice and mixed)
  6. Now add the dry ingredients and mix until you have a stiff consistency.
  7. Put the batter into the greased tray. Press the mix into the corners of the tray and ensure it is all equal level.
  8. Once step 7 is completed, sprinkle cold water over the mix. This will ensure the mix does not dry up as soon as it goes into the oven.
  9. Place batter into the oven and bake for 45 minutes on 140 degrees (fan oven).
  10. After 45 minutes, take the cake out of the oven and cut into equal slices. The batter will feel sponge-like. Put the cake back into the oven for a further 20 minutes.
  11. Now, remove the cake out of the oven, sprinkle some sugar onto the top and let it cool. 


Tips: All Ovens vary in temperature, please keep an eye on the cake.
            Cake can be served with custard or eaten on its own.

Almond Cake Drops

These melt in your mouth, almond drops are great with a cuppa! Ingredients 220g Melted butter 280g Plain flour 140g Castor sugar 1 Egg yolk 2 1/2 tsp of almond extract Pinch of salt Choice of Jam Method Preheat the oven to 190°c/gas mark 5 Have two baking trays ready Place the sugar and butter into a bowl and cream until light and fluffy. Beat the egg yolk with the almond extract and add this to the creamed sugar and butter. Beat until combined. Sieve the flour and salt and add this to the batter until when combined. Using a tablespoon or a scope, form round balls (the best you can) and place them on the baking tray. Use a dampened handle of a wooden spoon to form holes in the centre of the round moulds. Homemade Jam Tarts

Extremely delicious Jam tarts and all made at home! Ingredients 180g plain flour 2 tbsp Castor Sugar 80g Butter 1 Egg Pinch of Salt Jam of your choice Method Sieve the flour, sugar, and salt into a mixing bowl. Add the butter and rub until it resembles crumbs. Beat the egg and stir into the mix. Now, gather the mix into a smooth dough ball. Wrap dough in clear film and place in the fridge for 30 minutes. Preheat the oven to 220°c/gas mark 7. Lightly grease a 12-hole tartlet pan or muffin tray On a lightly floured surface, roll the pastry out to about 3mm thick. Using a round 3inch cutter (or anything you have of this size), stamp out 12 circles. Press the pastry circles into the greased tin. Place a teaspoon of jam into the center of each tart. Bake for 15 minutes, until pastry is cooked and light golden brown. Let the tarts cool for a couple of minutes and then carefully lift the tarts out of the tray. Let them cool completely before eating.
