Roasted Red Pepper and Tomato Soup

Out of this world soup. Simple, Easy and Yummy! Ingredients 12 medium tomatoes 2 small onions 2 green chillies (optional) 1 Carrot 2 Red bell peppers Olive oil Bail Garlic Large baking tray Stock cube Method Wash and halve the tomatoes and place them onto the tray Peel and cut the onion into wedges and place onto the tray Peel the carrot and cut into large chunks and place onto the tray Deseed the bell peppers and cut them into chunks and place onto the tray Garlic- you can either leave the skin on or remove. Place onto baking tray but once cooked, remove the skin if you left it on. Sprinkle olive oil and basil all over the ingredients. Give them a toss and place into the oven for 30 minutes on gas mark 180°c. please keep checking as ovens vary in temperature. Once cooked, take out of the oven and place into a pot. Almond Cake Drops

These melt in your mouth, almond drops are great with a cuppa! Ingredients 220g Melted butter 280g Plain flour 140g Castor sugar 1 Egg yolk 2 1/2 tsp of almond extract Pinch of salt Choice of Jam Method Preheat the oven to 190°c/gas mark 5 Have two baking trays ready Place the sugar and butter into a bowl and cream until light and fluffy. Beat the egg yolk with the almond extract and add this to the creamed sugar and butter. Beat until combined. Sieve the flour and salt and add this to the batter until when combined. Using a tablespoon or a scope, form round balls (the best you can) and place them on the baking tray. Use a dampened handle of a wooden spoon to form holes in the centre of the round moulds. Plain Cupcakes

Very versatile cupcakes and can be used for any occasion  Ingredients 100g Plain Flour 100g Melted butter or Margarine 100g Castor Sugar 1 tsp Baking Powder 2 Eggs 1/2 tsp vanilla extract Method  Preheat the oven to 190 degrees/gas mark 5. Line a 12-hole muffin tray with 8-9 paper cases. Sieve the flour and baking powder Beat the butter/margarine and sugar together in a large bowl until fluffy and pale. in a separate bowl, beat the egg and vanilla extract together and gradually add this to the butter and sugar. Beat for 1-2 minutes. Slowly add the dry ingredients to the batter and beat for a few seconds. Now, fold the chocolate chips into the batter. Spoon the mixture into the cupcake cases and bake for 20 minutes. Check cupcakes are cooked by inserting a toothpick into the center. The toothpick should come out clean. Homemade Jam Tarts

Extremely delicious Jam tarts and all made at home! Ingredients 180g plain flour 2 tbsp Castor Sugar 80g Butter 1 Egg Pinch of Salt Jam of your choice Method Sieve the flour, sugar, and salt into a mixing bowl. Add the butter and rub until it resembles crumbs. Beat the egg and stir into the mix. Now, gather the mix into a smooth dough ball. Wrap dough in clear film and place in the fridge for 30 minutes. Preheat the oven to 220°c/gas mark 7. Lightly grease a 12-hole tartlet pan or muffin tray On a lightly floured surface, roll the pastry out to about 3mm thick. Using a round 3inch cutter (or anything you have of this size), stamp out 12 circles. Press the pastry circles into the greased tin. Place a teaspoon of jam into the center of each tart. Bake for 15 minutes, until pastry is cooked and light golden brown. Let the tarts cool for a couple of minutes and then carefully lift the tarts out of the tray. Let them cool completely before eating. 

Chocolate Chip Cookies

Ingredients 250g Plain Flour 170g Melted unsalted butter 1/2 tsp bicarbonate soda Pinch of salt 150g Dark brown sugar 60g Castor Sugar 1 Egg 325g Chocolate chips 1 Tbsp Vanilla Extract  Method Preheat the oven to 170°c/gas mark 3. Sieve the flour, salt and bicarbonate soda and leave to the side. Cream the melted butter and sugars together until pale and fluffy. Beat the egg in a separate bowl with the vanilla extract and add this gradually to the batter. Beat for 1 minute. Beat in the salt, flour and bicarbonate soda. Beat until well combined. Stir in the chocolate chip cookies. Place the batter into the fridge for 30 minutes. This allows you to handle the batter better. Using a tablespoon, scoop out round molds and place onto the baking tray. Or, you could scoop out the batter using a spoon and then roll it into a round shape. Keep cookies 6cm apart. Buttercream

Soft and delicious. This can be used for cupcakes, cakes and even cookies.  Ingredients 100g Softened butter 225g Icing Sugar Method Beat the softened butter until fluffy and pale. This can take 5-6 minutes. Then add the icing sugar slowly. Beat for 7 minutes. The buttercream mix should be fluffy and pale. Tip : Double the above ingredients if using a piping bag. 

Banana Loaf

This loaf is soft and very moreish. It is enjoyed well with a cup of tea! In gredients  110g Melted Butter/Margarine 195g Castor Sugar 245g Plain Flour 1 tsp Baking Powder 1 tsp Vanilla Extract 2 Ripe Bananas Method Preheat the oven to 180 °C/gas mark 4 Grease a loaf tin. Sieve the flour and baking powder and leave to the side. Mash the two bananas with the vanilla extract and leave to the side. Cream the sugar and butter/margarine until fluffy and pale. Add the mashed bananas to the batter and mix for 1 minute. Add the flour and baking powder to the batter and mix for a few seconds. Pour the mix into the greased loaf tin and bake for 45 minutes. The loaf can be covered after 25 minutes with tinfoil to stop it from browning too much on top. Insert a toothpick into the middle of the loaf. It should come out clean, if not leave it in the oven for a further 5- 10 minutes. Let it cool completely in the loaf tin before removing and cutting.
